INKA'S ......Peruvian Restaurant

Decided to try the new Peruvian restaurant called Inka's on RT 80 (Foxon Road) in East Haven CT. They claim to feature authentic peruvian cuisine with marinated grilled chicken as their signature dish.
Started with appetizers of green lip mussels with tomatoes, onion and lime juice....which were very good. The ceviche was excellent, although I prefer scallops and shrimp....this one was diced fish only. The only problem with the appetizers was that it took 45 minutes to get them...from the time we ordered. Being a new restaurant I guess they still haven't got the timing down yet !!
For the entre I had what best can be described as a peruvian version of fried rice...with chicken and egg. It had some interesting spices in it and was quite good. We also tried the specialty of the house..the marinated grilled chicken....which turned out to be disapointing.There was no marinade taste..the chicken was on the dry side,and bland.
I think if this place improves the speed of the service, and tones down the flourescent lights a should do well. After all..I am told that Jauque Pepin, the noted chef who lives nearby...loves the ceviche here and comes in quite often.
