Anybody have a good recipe for this? Is it any different than a straight Chinese version, b/c a Chinese-style recipe is easy to find on the web, but the Hakka one I'm having a little bit more difficulty with. It seems to be an ubiquitous item at the Hakka restaurants.
I've had some fantastic versions, as well as some absolutely disgusting ones, so I don't want to screw it up. One feature of a disgusting version was an overly gelatinous texture, and I don't mind eating feet/hooves, so it's not just my personal aversion to that texture, I just don't want it in that soup.
I'm hoping it'll help the sore-throat situation here.
