Incorrectly Cooked Steaks - What is proper?

If you order a steak and it comes out under-cooked, what is the proper thing the restaurant should do - especially at a high-end restaurant where you are paying $40+ per steak? Should they (1) re-fire the steak or (2) make a new steak?

Personally, I think that once they take the steak off the flame and then you cut deep into it, it will lose significant flavor/juices if they re-fire and re-serve that same steak.
