help with ina's lemon yogurt cake

The other day, I made Ina Garten's lemon yogurt cake but made 2 changes. I added 1 cup fresh blueberries sprinkled with a little Wondra, then baked in a 6 cup bundt. The proportions of ingredients led me to think I could make the cake in this size pan as I don't have a loaf pan. Plenty of batter, cake rose beautifully. I followed everything else exactly. First slice, a somwhat rubbery texture. Very disappointed. Could I have overmixed the cake batter? I mixed by hand. Could it have been the addition of blueberries? I thought it was a little strange adding oil at the end then folding in. Usually, with my oil cakes, I mix sugar and oil together before adding rhe rest of the ingredients. Any thoughts? This cake has gotten such good reviews. If the blueberries are a go, then that would be great!
