Ina Garten's Beef Bourguignon, Question??

I was thinking of making the below recipe because I have all of the ingredients--except mushrooms.

In my pantry I have dried shitakes (that have been there for years!). Because I have only cooked with fresh shitakes once, and am not real familiar with them--would shitakes totally ruin this recipe? (clash with the cognac, red wine, and bacon...)
