Ina Garten's 1770 House Meatloaf -- make ahead and cook the next morning??

I am making this for a work pot luck, and I really don't want to cook it, refrigerate it, and then reheat it (I've found that it's slightly dry the second day). I'm wondering if y'all think it would be ok to prepare it the night before and cook it in the morning? I really don't see why not, but I don't consider myself an expert at all, and I would HATE to have to go get something store-bought right before work.
