ILVE Nostalgie vs American Range Performer 36" range

We are purchasing a new home which does not include appliances. This beautiful, everything my husband has always wanted kitchen, has the built in opening for a 36" range. Retired firefighter, he's an amazing cook. I want him to have whatever he needs to continue his favorite hobby. Cooking.

His preference has always been to cook with gas. He is used to commercial stoves from many years of cooking in the firehouse.

We've always had 30" residential, so have been learning a lot. As we recover from sticker shock, we think we have it narrowed down to a couple, but could really use advice, input.

The two we think we have it narrowed down to are:

ILVE Nostalgia and American Range Performer, 36" range

If you have experience with either of these ranges, please share what you do and do not like, and why. We are also open to other suggestions of course.
