If Il Santo Bevitore is our European Fave, what is similar in Rome and Florence?

Loved Il Santo Bevitore last night, the wines, service and cook was (for us) a perfect modern rustic take on the flavors and joy that is Tuscany. From the starter of prosciuttos, spicy pear mustard jelly and sheep cheeses, the farfalle and rabbit ragout, and the pork shoulder with beans and greens (yummy!) to the "coffees" of dessert we were in heaven. We have eaten across Europe and in Venice without finding such consistency and what we consider to be a perfect blend of modern rustic flavors.

Now we would love a similar approach in Rome. Can we find it?

We are still in Florence for a few days, any other restaurants that are similar on the modern rustic vibe?
