Help me identify molecular gastronomy Texturas products

runwestierun | Feb 17, 201110:06 AM

OK I preordered a copy of Modernist Cuisine and I ordered a Texturas ingredient kit to use with it. The problem is they have cutesy names for everything, rather than identifying what they are. Could you please help me identify what I've bought?

"Glice"=
"Gellan"=
"Citras"=
"Gluco"=
"Metil"=
"Xantana"=
"Lecite"=

There is also "Iota", which I assume is iota carrageean, but the box says there's kappa carrageean in there somewhere. I'd rather have iota, and I'm hoping that's what "Iota" is, but does anyone know for sure what that is?

There is also "fizzy", their poprocks, "Agar" I assume is agar agar, "Calcic" is calcium chloride, and "algin" is sodium alginate.

I seriously think these cutesy names keep people from buying this stuff because you can't just use it in a regular recipe. I only bought it because it's the only kit left out there with everything else being sold in anticipation of the release of Modernist Cuisine.
