My friend had to bolt out of town for a couple of weeks, so I scored some free food from her fridge. Yay! But there is about 1.5 lbs of really smokey (ok, salty) smoked gouda.
It's 100 degrees in these parts, so I really don't feel like using any of the mac n cheese or scalloped potato recipes out there. Does anyone have any ideas how I can work some of this cheese into some lighter, more summery recipes?
