I went to this great natural food restaurant in Manhattan called Hu and they offer rotisserie pineapple as a side. It's fresh pineapple chunks roasted with what seems to be a touch of cinnamon. I tried to see if the recipe was floating around on the internet, but alas not yet. I found many roasted pineapple desserty stuff and some grilled pineapple recipes,but i don't have a grill and this was more of a savory-sweet dish.
Has anyone every roasted pineapple successfully? I'm thinking maybe toss it in coconut oil, salt, a little bit of brown sugar and some cinnamon, but no idea how long, at what temp, etc. Any suggestions welcome!
