For Father's Day I'm disappointing Dad with a healthy dinner ;-) We're having a big salad with lots of farmer's market veggies and grilled marinated chicken servied w/ mini muffins (carrot/apple/coconut). This part is set in stone...I'm taking a big portion of the same to my cousin recovering from cancer surgery the next day, and this is my best choice for transportable, easy keeping, and healthy.
For my Dad, I'll follow it up with his favorite, bananna pudding. But for starters, I'm stumped. My Dad does not like cold soup, husband does not like hot soup in summer. My mother does not eat cheese. I thought about fruit, but the meal is already a little on the sweet side. Any ideas? thanks.
