Need Ideas for My Menu for Two

Hubby and I aren't fans of going out to restaurants for Valentine's Day, New Year's Eve, etc. That said, I always look forward to preparing us something a little different on those nights. I'm not going for fancy, just an actual meal that involves multiple courses, and being able to prepare some of it ahead of time. I would appreciate any input you have for the following general idea! Thanks in advance.

Appetizer: Shrimp/Crabtini
Bread: Popovers (open to other idea for soaking up the delicious broth :-))
Main: Crawfish Etouffee
Side: ??? I prefer something not carb heavy, since the etouffee will be served over rice and serving popovers/bread. Do I even need a side?
Dessert: ??? Again, would prefer something that could be made ahead of time. Something in individuals portions would be ideal, as I don't want to make a huge amount for the two of us.
