I have volunteered to share/demonstrate making some healthy snacks for kids and parents at a local Ronald McDonald house next Tuesday.
These parents really need some great snack ideas that will be healthy for their kids, and - since they're pressed for both time and money and often shuttling between the house and hospital - they should be fairly easy to prepare, affordable and, possibly, portable.
I'm told the only dietary restrictions would be any meat/fish items that aren't completely cooked as the kids have reduced immunity (no sushi!).
I'm open to any suggestions that fit the above parameters.
Also - the families have access to an oven, microwave, blender, etc in the house's kitchen and have small refrigerators in their rooms.
Some initial thoughts are: veggies and hummus; fruit w/ yogurt dip; edamame; maybe a Spanish-like omelette that they can use what ever veggies they have on hand; whole wheat quesadillas...
