Ideas for goose eggs (particularly the whites)

I was gifted 15 big beautiful goose eggs. Having zero experience with goose eggs, I figured I do some experimenting. I started with a simple soft boiled with toast. I noticed the whites are quite different than chicken eggs. I'll try them scrambled as well but I really want to give them a go in a custard. I use a recipe similar to this I'm guessing the goose yolks are probably equivalent to 2-3 chicken egg yolks.

Any ideas what to do with the whites? Would they work in meringue?

Any other suggestions for the eggs are greatly appreciated!
