I had a dear friend reach out and ask if I would provide him and his family some basic cooking lessons. It is him, his wife and 13-year-old daughter. However, his daughter has celiac disease. At first I was like, “Ugh - I don’t know anything about gluten-free cooking.” But the more I thought about it, the more I kept thinking how many things are naturally gluten free. I don’t know much about their situation yet (we’ve just spoken via text & e-mail thus far) but here’s what I know:
- Wife doesn’t like to cook
- Husband doesn’t mind, but doesn’t have a ton of time (works full time, etc.)
- When he explained a typical weeknight in their kitchen it sounded like chaos!
- They currently have about 4 meals they keep repeating (don’t know what those 4 meals are - I should have asked, but will be meeting him in person this week and will ask then.)
I think I can help with the chaos and organization. I’m good at that. However, I have to remember they are quite different from me: I have a fully-stocked kitchen that I’ve built over time (equipment, spices, pantry, freezer, etc.). Also I am happy to spend a few hours on a Saturday and 4-5 hours on a Sunday planning, shopping and meal prepping for the week ahead (it’s just Mr. PennyG and myself).
I need some ideas for quick weeknight healthy gluten-free meals that don’t require tons of advance prep work or specialty ingredients. THANKS!
