I eat mostly vegetarian, but my husband is on a low carbohydrate diet. As you might guess, this is somewhat of a culinary "challenge". Here are the main courses I usually make. (I generally eat them with noodles, rice etc) I'm looking for other ideas to add to the list. Preferably ones that can be made on a weeknight - ie in less than an hour.
stir fry with tofu, seitan or quorn and vegetables
hot and sour soup with tofu
Asian peanut soup with tofu and vegetables
eggs with vegetables and/or cheese
broccoli and cheese
Greek salad with Feta, olives (I don't consider this a main course in the winter.)
Spaghetti sauce with tofu and Parmesan (I eat the real stuff. He sometimes uses the fake, low carb spaghetti which is vile or I'll put it over quorn with mozzarella cheese and bake.)
