Need new ideas for camping potluck side dish

I'm looking for ideas for a new side dish to bring to a potluck dinner on a camping trip. I will make it at my campsite and then drive it to the potluck location (maybe 10 minutes), where it will sit on a picnic table for an hour or more before dinner.

We generally end up with a lot of salads and desserts, so those are out. I usually make a pesto pasta salad (with kalamata olives, cherry tomatoes and feta cheese) which can sit out at room temperature, but I want to try something new. Best would be something that can be served at room temperature.

Most of the people who "camp" at the potluck location have RVs so they supply hot dishes. We usually have several pots of beans, corn on the cob, mac and cheese, corn bread, garlic bread...

I was thinking of grilled vegetables. Those would be ok at room temp. But I don't usually bring a grill. So best would be something I can make on a 2 burner Coleman stove.
