As anyone who's purchased Sprinkles' cupcake mix kit would know, they actually publish their frosting recipe on their box. However while I love the sweetness of it, the elderly in the family (health eating bunch) aren't so fond of it. The first thing they do is scrap off most of it.
So I begin trying to experiment with it, and found that for 56g of butter you need at least 100g of powdered sugar to achieve the thickness of Sprinkles' frosting (that it's spreadable, and not buttery). However it's still very sweet. I tried adding french rue style sauce (flour + milk) to add the thickness of it, and less sugar. While it does work, but at higher room temperature the frosting would just melt and slip down.
I've read couple different recipes that suggest using heavy cream in it, I haven't try but I would imagine it will be just like using the rue. So i'm wondering if anyone has other idea to make simple frosting that's just as thick as Sprinkles', but not as sweet.
In case anyone want to know here's what I used for the frosting.
