I have no idea what to do with smoked turkey, help save my thanksgiving!

My mom and I asked our dad in his spare time to buy a whole raw chicken or turkey for Thanksgiving. Instead he ended up buying a pre-smoked turkey thinking it'd be even better. It was double the price of a regular chicken or turkey and we don't want to waste money and go over-budget, so we've decided just to make do. But the thing is, I've never even had smoked turkey! My friend tells me it's often used in southern cooking to make collard greens, and that it's extremely salty and no one eats it by itself? Now I'm depressed!
