Need idea for make-ahead brunch treat to serve at room temp.

Tasked with making a brunch treat (e.g. cinnamon rolls, quick bread, muffins, scones, etc.) but it needs to be something I can prep in advance, and it also has to be something that can be served at room temperature and still taste good.
(In other words, no recipes that recommend: "serve warm" or "serve immediately" since it will be sitting out for at least three hours before it is consumed.

I'd love it to be something that looks impressive and tastes amazing but won't take me six days to make.

Bonus points for something that incorporates fall flavors (e.g. pumpkin, or apple.)
