Ice cream recipes--delicious but why so little?

I just hopped onto the KitchenAid ice cream attachment train in December and have tried a few recipes since then (from Bi Rite's cookbook and from "The Perfect Scoop"). Almost all of them have been absolutely delicious and I've marveled at the results, but one thing alludes me:

Each of the recipes says it will make about 1 quart (1 liter) of ice cream, and only one of the recipes so far has actually successfully produced this much. For the amount of work that these recipes take, I'd hope that they would produce a full quart, but I always put them in a 1 quart ice cream container and they never add up. Why is this? I follow the recipes to a T (and this phenomena occurs even for sorbet recipes which require no boiling down, custard-making, or cooking, so the volume should end up being pretty exact).

The one time I tried to double a recipe, it was a total failure (I don't know if the ice cream attachment just couldn't handle it (it claims it can handle it) or if the volume just meant it took too long to freeze or what. But if you have any suggestions re. doubling, that would be great, too.
