anyone know why adding more cream to the mix doesn't make ice cream better? or for that matter why creamier cream (higher fat content) doesn't seem to improve texture? I would have thought that the more fat-rich the ice cream the smoother and creamier the finished product, but it seems the opposite is true and the more cream one adds the more bricklike it freezes; all the recipes seem to be pretty heavy on milk or half and half

part of me rebels at this and wants to know why
