I seem to be hungry for Mexican. Earlier in the week I came up with stuffed peppers with a Mexican flavor, a little masa, sauteed onion and garlic, corn, Mexican oregano, grated cheese and topped with a good salsa.
Yesterday I bought steak for dinner and found myself wanting something different and hauled out R. Bayless's Mexican Home Cooking. I found the recipe for steak with guajillo sauce. I got right to it and made the sauce and unfortunately did not have 4 hours to marinate the steak but an hour and a half was okay, I'll definitely plan further ahead next time I served it up with greens and an enchilada also made with the guajillo sauce. The rest of that sauce will go on tortillas in the AM with fried eggs.
Again hungry for Mexican tonight's dinner also from Mexican Home cooking is chicken marinated in crema and chipotles which will be broiled and then to the broiling dish will have more crema and spinach added. Some warm corn tortilas on the side.
Tomorrow's dinner which is in the oven now is from Bayless's Mexico One Plate at a Time. It is shortribs with fresh poblano rajas,(my fingers are tingling from skinning them)tomatoes, onion, a lot of garlic and marjoram and thyme.
I seem to be on a roll. Anyone have any favorites from those books? I also have his Authentic Mexican, all of Diana K's books, Zarela Martinez, Patricia Quintana, Aida Gabilondo and Marilyn Tausend's book of recipes she has collected from Mexican families now living in the US.
I do watch my carbs and the corn tortillas I buy weigh in a 4.5 g/tortilla, but I'd love some suggestions for recipes some of you may have tried.
