Ali made some beautiful farmer cheese and it inspired him to make some wonderful humitas, not as an empanada, but with delicate crepes. I know he's made this in the past, but I've never had them, and they were superb -- fresh corn, onions, garlic, red pepper (?), luscious fresh tomato sauce, and that fresh cheese. Yum. It was so good, I had two orders in lieu of an entree.
It looks like Ali is going to keep making the humitas until he runs out of the cheese. I'd get there ASAP.
