Hubert Keller's Fleischschnaka recipe

I only caught the end of the Keller Family Treasures episode of Secrets of a Chef. He was browning pasta roulades with a savory filling, then braising them in beef stock. His website does not include the recipe, and there's only one Google result for them in English. Anyone have Hubert Keller's recipe, or another one in English to recommend? TIA
