"House" soup in Chinese restaurants

It's usually a thin but full flavored broth with a few bony pieces of meat (pork? beef?), carrot pieces, shreds of greens and not much else. Fantastic tasting to me, but I can't find a recipe for anything resembling it in any of my cookbooks. Does anyone know how to make such a soup at home? What cut of meat, secret spices? Is there a cookbook for this sort of simple (not-Ken-Hom-home-style) food?
