'Hounds... wedding food advice?

I recently became engaged and, frankly, all I care about is the food. Mr. Geeky and I love good food. We recognize that it can't always be the most innovative, especially with mass preparation involved in weddings, but we want something fantastic, even if it's great burgers or BBQ.

Our ultimate vision is to have an eclectic mix of our favorites, ranging from classic American to Chinese comfort food. However, from what we can find, it seems almost impossible to have a caterer that can do it all. We also don't want to use a venue that requires us to use their in-house caterer because many seem inflexible.

We were also hoping to do something like serve the food family-style, because it's traditional in Chinese culture, but also because it could help cut costs. However, I've never seen it done outside of a Chinese banquet.

In other words, we're trying to look far outside the box. Thoughts? Suggestions? Any interesting experiences?

Sorry about the broad post... I'm a little lost as to this whole planning thing.
