So my bf has grown more tomatoes than I know what to do with and I started to put them in the dehydrator. I love store bought dried tomatoes in oil but it's expensive! I've read you can store dried/dehydrated tomatoes in oil in a mason jar and all the recipes call for sterilizing, screw on lids, etc. but say to just submerge the tomatoes in oil completely, seal the lid really tight and you're done! I am skeptical of this and have a few questions.
Is it possible to hot water bathe them so a pressured seal would form, like pickling?
Would that mess up the outcome of the tomatoes, i.e. making then mushy or cooked?
Would the heat from the water bath break down the oil?
How come I can't seem to find anything about this?
How long will the tomatoes in oil keep if just screwed on vs sealed in a bath? Thank you so much for any answers.
