Lately, I've been making my own hot sauce. Here's my recipe:
8 ounces (by weight) of seeded and stemmed hot peppers, coarsely chopped
1/4 cup water
Simmer until peppers are soft. Dump into the blender and puree, adding more water if necessary to make a smooth 'sauce'. Put through a fine sieve. Add water to thin it down, if needed. Add salt to make it very salty, and citric acid to give it tang.
