The Horror of Gelatinous Seabass

It looked so good in the display case, better and fresher than the other fish. So I bought a nice piece of sea bass thinking how could a piece of fish this beautiful not cook up perfectly. I blocked the memories of sea bass past, that I had bought and been disapppointed with. You see I can never get it to cook through like in the restaurants, it's always gelatinous and uncooked even if I cooked it for an hour.

Anyway I got some olive oil and garlic going in a pan and put the sea bass on. Turned it twice maybe 20 minutes total. It was a thick piece of fish.

It came out gelatinous like all the others. Doesn't matter if I BBQ it or pan fry it this crappy (yes crappy!) fish comes out gelatinous. Screw you sea bass. Give me boring salmon at least it will cook right.

Anyone else had problem coooking sea bass? Who knows how to do it right? If no one then let's make a stink about the expensive jello that they call sea bass. Yuck!
