After five years (, I finally made it to East Tennessee (Knoxville area). Had a very good trip, with morels, ramps, Benton smoked meats, and a variety of fish. Caught hornyhead, Northern hog sucker, smallmouth buffalo, and rainbow trout. The hornyhead was very good, very clean tasting and sweet. I filleted the sucker, scored the fillets and fried them. The bones weren't noticeable with this treatment. The flavor reminded me of shad. The buffalo, straight out of the creek and into the frying pain was also good, with a very mild freshwater flavor (but lots of bones). The small trout were tasty, but the bigger ones were a bit "fishy". The country side was beautiful and the people friendly.
