HONG KONG: Best Traditional Cantonese Restaurant with One Michelin Star

Planning to have a solo traditional Cantonese lunch at 1-Michelin star restaurant when I come back to HK in January. Dimsum is not an option--planning to order a "real" meal. I'm currently oscillating between Yung Kee, Fook Lam Moon and Lei Garden (Tsim Sha Tsui)--although I'm having doubts on how "traditional" the last one is. Any advise would be greatly appreciated, especially on menu advice, prix-fixe options and prices/value-for-money.
