Honeymoon planning - too many options!

Ok, so we've got three full days in manhattan for our honeymoon. We're northwesterners and don't need seafood (unless it's amazing and something we can't get at home) or Asian foods, as we're well versed in those areas. I've made reservations at Babbo for a semi-fancy night out although the only table they had was 10:30. It's a Tuesday night, is this late for weeknight dinner in NY? Are we going to feel rushed? What should we do beforehand? Any good bars/cool things closeby?In Portland the place wouldn't even be open at that hour so I don't know what to expect.
Here's the list I've compiled and I'm hoping for some feedback. If the places are worth it, anyplace else we should try? We do have somewhat of a budget to keep in mind too. Thanks in advance.

Cafe Sabarsky (for breakfast before going to the Met)
Chelsea Market
Vintage New York (I'm in the wine business and am curious about NY wine)
Balthazar (Is breakfast or lunch better?)
Hearth
Aquavit (bar or lunch)
Katz's (pastrami sandwich)
Lombardi's (husband's only request)
