Homemade Tofu crumbly...

My first attempt at homemade tofu (also using homemade soy milk) yielded a crumbly and unusable mess that somewhat stayed in a block shape. Did I perhaps not put enough lemon juice in it? I pressed it in my tofu press for several hours and then put it straight into cold water. Any ideas?
