Homemade Red Thai Curry Paste...Worth the Effort?

SirLoinOfBeefery | Feb 23, 201610:44 PM     9

Hey fellow Chowhounders,

I am planning on making a *stellar* Red Thai Curry paste. It is imperative that it is as authentic as possible and also as delicious as it can possibly be (side note: this is my very first time making a Thai Curry, but I am ambitious. It is to impress my boyfriend with my cooking skills.

To make a short story long....Should I make the effort to lovingly toast my spices, grind them all, etc., to make a homemade red curry paste or just pick up a jar of Thai Kitchen tomorrow? Cost isn't *really* an obstacle...unless it's exorbitantly expensive. I'm more concerned about the availability of certain items (wherefore art thou, Kaffir lime leaves?!)

Please feel free to share any advice and/or recipes. Especially welcome: family/tried-and-true recipes. *ESPECIALLY* welcome: Advice on how to best handle the rice noodles. I'd like to make them from scratch as well, but keep in mind, I am by no means one of those noodle ninja types that can twirl them into a million, perfectly uniform strands with a flick of the wrist.

Thanks for checking out my first post :)
