This is something that I have been doing for a while and thought I would share it with the community. Because I smoke a lot of meats I got the idea to smoke some garlic and onion to see if I could make some powder. Well, not only is that a resounding yes, but it is also far more potent and flavorful than anything that I have bought from the store. The process is fairly simple.
1. Slice onion into rings, peel garlic into cloves (this can be time consuming)
2. Smoke for a couple of hours. I usually do this when I am smoking some meat.
3. Transfer to dehydrator trays and dehydrate for as long as needed to remove all moisture
4. Powder it in a burr grinder and then filter through a fine mesh sieve
It can be some work but my-oh-my this stuff has punch.
