searching for some advice with homemade marshmallows. Im making them for wedding favors, and would love them to be perfect the first time, saving me the trouble of re-making them.
Ive made plain homemade marshmallows before, and loved them, but i wanted to do something a little different this time.
I want to try a lemon flavored marshmallow, although not sure what effect the acidity will have on the marshmallow.
was thinking of using lemon extract and lemon zest in the marshmallow 'batter', and dusting them in a sugar/pulverized candied lemon peel mixture.
Anyone have tips/ dos and donts/ of making citrus marshmallows?
