Does anyone have a good base recipe for homemade ice cream that does not take a lot of egg yolks? The last few batches that I've made w/o cooking a custard have come out grainy or rock hard. (n.b. I'm also experimenting with soy milk and heavy cream.) Most recently tried a "Ben & Jerry" recipe with whole egg (uncooked) and didn't like the resultant texture at all, which was sort of oily. I have an Il Gelatio so the freezing temperature or beater speed isn't a factor.
