What homemade food gifts are good for mailing?

Hi! Thank you in advance for your help! Instead of buying Christmas gifts for my extended family I think I'm just going to make gift baskets. I figure they are just as likely to be thrown away as anything I get at the mall. I hate shopping, I love cooking so at least I won't dread Christmas shopping this year!

Most of my husband's family lives on the West Coast we are on the East, plus we are leaving to go on a vacation at Christmas so I'll need to mail the gifts a little early, so I need to mail things that won't spoil quickly (within 3-4 weeks).

Here are some ideas I have so far:
-small boxes of truffles
-caramels
-chocolate bark
-baggies with my Chai spice mix and tea
-biscotti
-mustard mix

Any other ideas??? I'm not into canning, btw.
