i confess to having a weakness for archway dutch cocoa cookies. (it's a very expensive weakness, calorie-wise) however, i'm not happy that the cookies contain the evil hydrog shortening, and i was thinking the other day that i would like to make my own.
In shape, texture, and sugar-coated outside, the dutch cocoa cookies resemble the excellent ginger cookies i made this holiday season with lard (recipe from the NY times). So i figure i want a dryish dough that i can make into balls and roll in sugar, but with brown sugar or molasses in there to add chewiness. (molasses might add too strong a taste)
anyone have any recipes or ideas? basically, i'm looking for a large, chewy, chocolate cookie recipe, made with cocoa, where i can use lard instead of shortening.
