My original post of Homemade Chorizo was posted on 12Nov13. Today's lunch, 15Nov13, was Chorizo in ramen noodle soup. Will I make the soup again? You betcha!
First it must be made known that I belong to the "What if...?" school of cooking specializing in "Cuisine Impromptu." The recipe follows...
1 pkg. ramen noodles (flavor packet discarded)
1 appox. 8 oz. Chorizo patty, defrosted
Canola oil, just enough to cover the bottom of a deep saucepan
1 small onion, diced
1 celery stalk, diced
2 cups of water
A few squirts of soy sauce
1 4 oz. can of mushrooms, chopped after drained liquid is discarded
NO SALT OR BLACK PEPPER
The flavor packet is discarded because it contain salt, sugar and MSG as primary ingredients. The chorizo contains seasonings and crushed hot peppers, and it and the soy sauce contain salt.
Before opening the package of noodles, I crush them with the heel of my hand because I do not eat the noodles with chopsticks.
Add the canola oil to the saucepan and heat at low-medium temp until it shimmers. Add the diced onion and celery, saute until the onion is translucent. Then the chorizo breaking it up as it browns.
Next add the water when the chorizo is well browned, and a few squirts of soy sauce for color and to taste. Stir and add the chopped mushrooms. Bring to a strong simmer before adding the ramen noodles.
According to package instructions, the noodles cook for 3 minutes before serving.
Makes 2 bowls of soup.
