I'm trying to cobble together an all-purpose, low-carb baking mix to serve as a substitute for wheat flour, as my doctor has put me on a low carb diet. There are lots of pre-made mixes out there, which are VERY expensive, and which of course don't list proportions of whey powder to wheat gluten to soy flour etc. And most of them contain some sort of artificial sweetener or preservative, which I'd just as soon avoid.
Has anyone come up with a good combination that works for most recipes? "Specialty" ingredients like nut flours aren't a problem, nor is freezer space for storage. I'm not trying to regain all the forbidden foods-- I just want something neutral-tasting that I can make a quiche crust with or bread chicken cutlets with every once in a while.
