Homemade Baba Ganoush Dip Help?

Hi, I love Baba Ganoush with pita chips but its too expensive to keep ordering it from restaurants so I decided to make it instead. (

The recipe call for roasted eggplant but I don't have access to an oven (college dorm). All I have is a pot, slow cooker and a portable electric grill. If I boil the egg plant or half it then sautéed it with olive oil instead or maybe grill it instead, will it work? Will it taste different? Which is the best alternative method? Thank you.

PS. Does anyone know how long can the dip last when refrigerated?
