Home Bartenders: How do you get those nice garnishes?

Hi all,

Basically, my question is simple: How do bartenders get those nice, long (sometimes really long) strips of lemon, lime, etc. which are added as twists to cocktails? I asked one bartender and he showed me what he used (linked below). I've found it's OK... but far from great, and is clumsy to use. I'm pretty good with my hands, so I don't think it's me...

The site with this tool also has a "Lemon/Orange peeler" and a "Channel Knife" which, at least from the photos, seem like they do a similar job. Has anyone found a good, sharp, reliable tool to take care of this silly, but crucial (in my drinking circle anyway) job? Thanks for the input.
