I am planning a holiday cocktail party where it looks like about 25-30 people have RSVP'd. It's to begin around 7pm. I am planning on serving quite a bit of food. My concern is that I worry that maybe I m overdoing it. Even though I have the RSVP's, I'm thinking that a lot of people will have dinner before coming, and some will be coming later, as they have other commitments. I don't want to cook up a storm only to have it be wasted.
On the menu:
A small (10lb) spiral sliced ham, served room temperature with dinner rolls and mustards
Beef tenderloin, also served room temperature with rolls. What is an appropriate amount?
Tortellini, tomato, olive skewers
Cranberry Brie bites
Something sweet. To be determined.
My husband says I am over-thinking and over-doing it. But he's happy with just serving booze and "snack type foods". But I like to have something a bit more substantive.
