How do I hold large quantity of Grilled Veggies?

Hey chefs,

I'm throwing a dinner BBQ for about 30 people and want to grill the veggies ahead of time so the grill is clear for meats and fish at dinner time.

My plan is to grill the veggies in the morning to almost-done with nice char/caramelize, stack in full pans for risidual heat to finish, cool an hour or so on the counter, then hold in fridge.

Then, remove from fridge about 2 hours before dinner and serve at room temp.

Do you think that's the way to go?
