Continuing the tour of cold ramen dishes served in warm weather, recently I tried the hiyashi chu-ka at Himawari. The silky, firm and cold noodles were dressed with a delicious vinaigrette accented with sesame and yuzu notes. Carefully arranged over the top were julienned strips of egg omelet, chasu, wakame, cucumber, tomato, and red onions. I was impressed by the careful prep of the tomato, trimmed of the seed sacs. In addition, corn niblets (much loved by the Japanese) and toasted sesame seeds completed the composition. When tossed together, this made a delicious and refreshing salad. There was an excess of dressing leaving a puddle in the plate. I also found the corn hard to eat very efficiently with chopsticks. Yet, all in all, I liked this dish and would order it again.
