An LA Hound inquired on General Topics about where to get a prepared dipping sauce for grilled artichokes. Last year at Puck's Wine & Food Festival Frank Ostini of the Hitching Post in Buellton published the recipe for their dipping sauce, which is delicious.
4 oz peeled garlic cloves
1 lb onion thinly sliced
4 pasilla peppers halved
4 tomatoes halved
1 t cayenne
1 t chile powder
1 t paprika
1 t salt
1 qt mayo
Slow roast the garlic and onion over an oak fire (an
oven works fine but you lose flavor).
Dry the pasillas and tomatoes in a smoker until soft.
Puree the garlic, onion, tomatoes and pasillas.
Add the dry ingredients and the mayo and mix well.
