Hestan Nanobond 11" (28 cm.) skillet impressions

drrayeye | Jul 2, 201802:03 PM     68

I've been hoping to purchase an 11" skillet/fry pan for two years--filling one of the few remaining holes in my cookware batterie. An 11" would be one size larger than my two 10" All Clad d5's, As has been my practice, as an induction user, I started exploring demeyere cookware. Demeyere has done pioneering work with induction technology--exhibited on the demeyere controlinduc:

Two interesting alternatives were deBuyer Prima Matera:

and Hestan nanobond 11" skillet:

Despite the outrageous offering prices, I was ultimately able to find them all available for about $200. They are terrific pans with interesting innovative technology. The question: which one should I add to my batterie if I could find it at a satisfactory price point. I drifted away from my Demeyere starting point and chose Hestan nanobond.

I intend to describe my nanobond skillet cooking impressions and experiences--as well as the subjective impressions of friends and hands on cooking experiences by two professionals. Other personal experiences, impressions, or links to further information is welcome.
